The tequila is meticulously crafted using sustainable practices. The agave piñas are roasted in brick ovens, extracting the bright citrus flavors of the agave. After 3 days of roasting, the agave is shredded and the juice left to ferment. The leftover fibers are used as compost for the agave fields. Following the open-air fermentation, the juice is distilled in handmade copper pot stills that were made by a local artisan, resulting in a clean & smooth spirit.
