Spirit of Hven is the rising star of Scandinavian Whisky. It’s located on the beautiful island of Hven that sits on the strait of Öresund between Denmark and Sweden. It’s not just a distillery but also a mini-hotel and a restaurant. They produce a various range of Whisky, Vodka, Gin, and Aquavit. Founded in 2008, the brain behind the operation is Hven owner, Master Distiller, and chemist Henric Mollin who’s big on hand-crafting his Spirits with certified organic ingredients. Exciting stuff.
Spirit of Hven Tycho’s Star Single Malt Whisky gets its name from Tycho’s Supernova which first appeared in 1572. The Supernova gets its name from the astronomer Tycho Brahe who discovered it and recorded it. He even lived on the Island of Hven for a short time in the 1500s. Anyway, the mash bill of this unique Whisky is comprised of three types of barley: pale ale malt, chocolate malt, and heavily peated Whisky malts. Master Distiller Mollin is very careful about what and how much he puts into his Whisky. Aged in casks made of air-dried oak, the selection of casks ain’t no coincidence either: 58.2% are heavy char Quercus Muehlenbergii from Missouri, 33.44% are heavy toast Quercus Petraea from Allier, and 8.36% are medium toast Q. Robur from Bourgogne.
In terms of flavor, this means light and sweet notes of freshly cut grass and citrus that develop into richer flavors of chocolate, licorice, caramel, and banana cream pie. Sip this star-inspired Whisky neat or on the rocks.
