A Reposado Tequila old enough and good enough to be called Añejo.
About eighty miles due east of Guadalajara is the town of Arandas in the Highlands (Los Altos) of Jalisco, Mexico. Don Jose Luna had been traveling back and forth for decades to visit family and friends there. He would bring back bottles of Tequila from craft producers in the region — a tradition picked up by the next generation. In 2014 the Luna family teamed up with family friend Phil Salvagio to bring the Tequila to a wider audience. That’s how the line of four premium CaliFino Tequilas was born.
CaliFino Tequila Reposado begins on the foundation of their signature Blanco Tequila. That means 100% Weber Blue Agave grown in the rich red soils of Los Altos. The hard-harvested piñas are slow roasted for two full days in a stone oven and fermented for three using natural yeasts. After being double-distilled, the Spirit is placed into Jack Daniels casks for a full twelve months.
If you know your Tequila, then you know that most Tequilas aged twelve months would call themselves an Añejo (old) because that’s the dividing line. But twelves months worth of aging is the minimum for CaliFino Tequila Reposado.
