At every stage of bourbon making, subtle choices are made that impact the whiskey. Though all bourbons are made from the same basic ingredients, it's the choices the master distiller makes that shapes his creation. Barrell Bourbon is made from a mash of 70% corn, 25% rye and 5% malted barley. After the grains are sourced, they are mashed and fermented before being distilled through a copper still. We selected barrels of a 100% malted rye distilled and matured in Poland for 5 years in new charred #3 oak barrels from World Cooperage. We then blended it with an Indiana high malted barley rye that was aged in Indiana and Kentucky for over 5 years. The Polish Rye is dry, with a rich nutty flavor, and pairs beautifully with the lush Indiana Rye, resulting in a sweet and savory balance of malted chocolate and roasted cashews. One 100% malted rye distilled and aged in Poland for 5 years in new charred #3 oak barrels from World Cooperage, was blended with an Indiana high malted barley rye that aged in Indiana and Kentucky for over 5 years. This distinctive Polish Rye is dry, with rich nutty components, and complements beautifully with the lush Indiana Rye, yielding a sweet and savory balance of malted chocolate and roasted cashews.
